Spelt Trail Mix Cookies

A delicious cross between a cookie and a granola bar and the perfect snack to share on a hike!

Ingredients

  • 1 cup organic whole spelt flour fine grind if available
  • 2 cups spelt flakes or rolled oats
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter at room temperature
  • 1/2 cup local honey
  • 1 large egg at room temperature
  • 2 tsp pure vanilla extract
  • 1/2 cup raisins
  • 1/2 cup chocolate chips
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds

Instructions

  1. Preheat your oven to 350 degrees F and line two baking sheets with parchment paper. In a medium bowl, whisk together the flour, spelt flakes or oats, baking soda, salt, and cinnamon.

  2. Using a stand mixer bowl or another bowl and hand held mixer, whip together the butter and honey until light and fluffy. Add the egg and vanilla and mix to combine.

  3. Slowly add the dry ingredients into the wet ingredients and mix on low speed until just combined.

  4. Fold in the raisins, chocolate chips, pumpkin seeds, and sunflower seeds.

  5. Using a table spoon, drop the dough onto the parchment paper lined baking sheets. Using the back of the spoon or the palm of your hand, gently press and shape the dough down into disks. (They won’t spread during baking.)

  6. Bake for about 12 minutes or until both the bottoms and the tops are golden brown. Transfer to a wire rack to cool.
